DESCRIPTION:THIS CLASS IS BEING TAUGHT LIVE OVER ZOOM. YOU WILL NEED AN INTERNET CONNECTION AND SMART DEVICE TO STREAM THIS CLASS (PHONE\, IPAD\, COMPUTER\, TABLET). \nIn this class\, we’ll be making cottage cheese\, whey ricotta\, and butter! Class cost includes a starter kit of specialized cheese-making supplies you will pick up from Well Bread several days before the class. These ingredients are necessary to make the cheeses in this class. All other equipment and ingredients are the responsibility of the student. \nClass cost does not include milk\, cream\, and salt which can be found at any grocery store and you will purchase the day before class. You will need the use of a stove-top\, stand-mixer or hand-mixer\, an accurate thermometer (digital is preferred)\, a large pot with lid\, colander/sieve\, ladle and spatula for stirring\, a long knife\, measuring spoons (1/8tsp\, 1/4tsp)\, and storage containers for your finished cheeses and butter. Butter making requires the use of a stand mixer (whip attachment) or hand-held mixer (beaters attachment) – if you don’t have one\, borrow from a friend or buy one before the class. \nChef Cat is thrilled to introduce Dr. Jill Johnstone\, biologist\, and fellow cheese-geek! Dr. Jill will be leading this class and explaining all the microbiological processes that are going on in the pot creating your cheese. DESCRIPTION:At Well Bread we use sourdough starter that is more than 125 years old. In this class you’ll learn about creating your own Sourdough starter; how to care for it and how to use it in more than just bread. Proper sourdough bread can’t happen in a two-hour class\, but Chef Cat will guide you how to make your own dough (you’ll take that home to bake later) and how to get those big holes in your own sourdough bread. This is a basic class and will give you a great head start to caring for a sourdough starter. \nSourdough breads are a labour of love and take a lot of practice to master – it’s a living organism and can be as unpredictable as a human toddler. If you’re looking for a fool-proof bread baking class….this is NOT it. You’ll take home your own dried portion of Yukon Pioneer Ione Christensen’s 125-year-old sourdough starter and some bread dough you’ll make in class to ferment at home and bake in the days following the class. \nWe’ll make sourdough pancakes and enjoy some other sourdough treats made by Chef Cat before the class. You’ll receive all the recipes and some confidence to care for your newest “family member”.
