CURING AND SMOKING MEAT

Skill level: Beginner/Intermediate

When fresh fish are available you will learn to gut and filet a whole fish and how to prepare it for freezing or curing. You’ll learn how to grind meat and fats to make homemade sausage using traditional and quick cooking methods. This class is specially designed for hunters and outdoors persons. Beer and spirits pairings will be served with cooking demonstrations.
